Kevin Kaegel loves Filet Mignon so much that he made it his mission to track down the best in town. He found Jim Thomas, former executive chef of Boccaccio’s and Premier Catering.
“His food was that good,” said Kaegel, who ended up opening Clayton’s Restaurant with Thomas in 2016.
Kaegel discovered Thomas as a regular customer at Boccaccio’s, where Thomas was the executive chef. When that restaurant closed in 1999, Kaegel was on the hunt for a filet mignon that could rival Boccaccio’s. That’s when he found Premier Catering.
As Kaegel began to frequent Premier Catering, he learned there was a link between Premier Catering and Boccaccio’s: Thomas’ filet mignon. Thomas had gone on to be Premier Catering’s executive chef after Boccaccio’s closed.
When Premier Catering closed its doors in 2010, Kaegel got the idea to open his own restaurant – one in which people could end their search for the perfect filet mignon. In May 2016, that dream became a reality and Clayton’s Restaurant opened its doors in O’Fallon with none other than Jim Thomas serving as the executive chef.
The 4,000-square-foot restaurant offers an extensive menu that includes juicy steaks, fresh seafood, chicken and pasta. All steaks are hand-cut in-house. Salad dressings and sauces are made-from-scratch. While the filet mignon remains the most popular item on the menu, the seafood selection is exceptional and the restaurant features multiple chicken dishes as well as a selection of traditional “bar food.” The restaurant’s seafood and cheesecake won Best of St. Charles in 2018.
Clayton’s is considered a destination restaurant where people can relax and enjoy a great meal, dessert and drinks.
