An American spin on Mexican fare

Whether it’s a night out with friends or date night, Salty’s Fresh Mex offers fresh Mexican food with 10 different flavors of hand-shaken margaritas to wash it down. 

Co-owned by husband and wife team Paul and Angie Wegeng, Salty’s Fresh Mex opened in Cottleville in 2016. The cozy space has both indoor and outdoor dining options. Its menu includes burritos, tacos, nachos, fajitas and Mexican-inspired bowls – all made fresh to order.

In addition to serving lunch and dinner, come February, the restaurant will offer breakfast on weekends. The menu will feature both Mexican and American breakfast fare.  

Paul said he wanted to have a Mexican food restaurant “because there are so many flavors and tastes and different combinations.” He says patrons shouldn’t expect “authentic” Mexican food at Salty’s; he describes the cuisine as an “American twist on Mexican food.”

Paul emphasizes that “fresh Mex” means everything is made fresh in his restaurant. “We do everything fresh, from our salsa and guacamole to our refried beans.”

There are no fryers, freezers or microwaves at the restaurant. 

“We take a lot of pride in our food,” Paul said.

The effort to provide quality fare has paid off; Paul said he’s already looking for a second location.

“We want to have three or four [Salty’s locations] in the next five years,” said Paul. “But we don’t want to grow too fast. [Our] focus is offering 100-percent quality and taking good care of our customers.”
